Molasses Cake


Serves 6 to 8:
Eggs (2)
Muscovado sugar (1/2 cup)
Margarine (1/2 cup)
Molasses (1 cup)
Baking powder (1 tsp)
Wheat flour (1 cup)
Whole wheat flour (1 cup)
Water (1 cup)
Mixture of powdered spices (cinnamon, ginger, nutmeg, coriander, sugar)

1) Preheat the oven to 180C.
3) Mix eggs and sugar.
4) Add gradually the margarine, molasses, water, flour and baking powder.
5) Pour the mixture in a cake tin and sprinkle with the spices.
6) Bake about 35 minutes.
Note: 1 cup = 240 ml
