Lingon & Cranberry Chia Pudding

As I published before Roberts Berrie drinks are amazingly delicious and nutritious :)
After enjoying it by itself, it came the turn to the Berrie Lingonberry-Cranberry "dance" with some chia seeds... and the result was again really delicious!

Serves 1:
Chia seeds (2 tbsp)
Berrie lingonberry-cranberry (200g)

1) Mix everything together. Let it sit in the fridge for a couple of hours and enjoy. You can top with vegan whipped cream for a delicious and healthy dessert.

Blueberry chia pudding

Roberts Berrie Wild Blueberry is an amazing and delicious drink as is... 260 blueberries with all their goodness and nutrition into a single serving... yummy!

If you mix in some chia seeds... you get this wonderful and delicious chia pudding :)

Serves 1:
Chia seeds (2 tbsp)
Berrie wild blueberry (200g)

1) Mix everything together. Let it sit in the fridge for a couple of hours and enjoy.

Açaí Pudding

In my search for health food products in Sweden I found High Tech Scandinavia and what caught my attention was their vast range of powdered superfoods.

I've contacted them and last Friday I received this amazing gift from them:

The first one I've tried was the Açaí powder (organic, freeze dried):

"Acai is a superfood for real, it contains lots of vitamin E, vitamin B1, B2, B3, antioxidants, vitamin C, calcium, phosphorus, potassium, fiber, proteins, amino acids and fatty acids.

Acai powder has natural essential fatty acids, fiber and amino acids that work together to help your body burn fat, process food more quickly and lose unwanted pounds you want to lose. Acai powder will improve your immune system and digestive system so fat is not stored in the body."

It cloudy and a bit cold outside and a dessert idea for lunch time popped up...

Açaí Pudding

Serves 2:
Cornstarch (40g)
Muscovado Sugar (20g)
Açaí powder (1 tbsp)
Rice Drink (400 ml)

1) In a saucepan stir together sugar, cornstarch and stir in rice drink.
2) Place over medium heat.
3) Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon.
4) Remove from heat, add the Açaí powder and whisk until combined.
5) Let cool briefly, and serve warm, or chill in refrigerator until serving.

It smells good and it tastes even better, soft, rich and nutritious...

Apple Jelly Pudding


Serves 2:
Apple purée (250g - homemade, sugar free)
Agar-Agar (1 tsp - powder)
Water or Apple juice (2 tbsp)

1)  In a saucepan, combine water and agar-agar powder. Let stand for 5 minutes to soften. Set heat to medium-high and bring to a simmer, 2 minutes.
2) Add the apple purée and cook for 3 more minutes.
3) Pour into a serving dish and refrigerate at least 2 hours.

Pumpkin Pudding



Serves 4:
Soy drink (250 ml)
Muscovado Sugar (75g)
Pumpkin (400g - peeled and diced)
Cornstarch (2 tablespoons)
Cinnamon (1/2 tsp)

1) Cook the pumpkin until soft, drain well and reduce to purée.
2) Mix the remaining ingredients and bring to simmer about 15 minutes, until thickened.
3) Place in bowls and refrigerate, at least 1 hour.

Sweet Rice Pudding


Serves 2 to 4:
Short grain rice (1 cup)
Water(2 cups)
Soy drink (3 cups)
Muscovado sugar (1/2 cup)
Lemon peel (opcional)
Cinnamon

1) In a saucepan, bring water and lemon to a boil.
2) When it is boiling add the rice and reduce heat to a simmer stirring occasionally for about 25 minutes or until almost all the water has been absorbed.
3) Add the soy drink. Continue to let simmer, stirring until the rice is cooked. If necessary add more soy drink.
4) Add the sugar.
5) Pour the rice into serving dishes and sprinkle with cinnamon.

Chocolate Pudding



Serves 2:
Cornstarch (30g)
Muscovado Sugar (20g)
Unsweetened Cocoa Powder (2 tbsp)
Rice Drink (400 ml)

1) In a saucepan stir together sugar, cocoa, cornstarch and stir in rice drink.
2) Place over medium heat.
3) Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon.

4) Remove from heat. Let cool briefly, and serve warm, or chill in refrigerator until serving.
