A refreshing fruit salad, easy and tasteful that can be made
in advance. It makes a delicious snack and light meal.
Serves 2 to 3:
Peach (1)
Kiwi (1)
Pear (1)
Apple (1)
Raisins (20g)
Dried cranberries (20g)
Orange (1)
1) Cut peach, kiwi, pear and apple into small pieces and put all in a ball.
2) Add the raisins and cranberries.
3) Juice the orange and mix the juice with the prepared fruit.
4) Chill in the fridge, before serving.

Stir-fry rice and veggies
A delicious, fast and easy way to use rice leftovers.
Serves 2:
Brown rice (200g - cooked and cooled)
Bok choi (200g - chopped)
Carrots (100g - diced)
Garlic (1 clove - chopped)
Raisins (30g - dried)
Olive oil
Soya sauce
1) Heat oil in a wok or skillet, add chopped and diced carrots, cook them over medium-high heat for about 3 minutes. Add book choi and cook for 3 minutes.
2) Add the rice and the raisins, season with soy sauce and cook until rice is warm.
Serves 2:

Mushrooms, avocado and cashews stir-fry
A delicious combination mushrooms and cashews for an easy and fast meal.
Serves 2:
Mushrooms (100g - sliced)
Yellow pepper (50g - sliced)
Olive oil (1 tbsp)
Ginger (1 tsp - shredded)
Avocado (1 - cubed)
Handful cashew nuts (2 tbsp)
Raisins (1 tbsp)
Soy sauce (1 tbsp)
1) Heat the olive oil in a frying pan.
2) Add the ginger, pepper and mushrooms cook for 5 minutes.
3) Add the avocado, cashew nuts and raisins. Cook for another 2 minutes
4) Sprinkle with soya sauce and serve.

Sauteed Spinach with Raisins and Pine Nuts
Serves 4:
Spinach (500g)
Garlic (2 cloves - minced)
Raisins (50g)
Pine Nuts (50g)
Olive Oil (1 tbsp)
1) Cook the spinach and drain well.
2) In a frying pan add olive oil, garlic, raisins and pine nuts. Sauté until the pine nuts are golden.
3) Add the spinach, mixing well.
4) Serve warm.

Oat and Coconut Cookies
Makes 20 small cookies:
Wheat flour (100g)
Rolled oats (100g)
Baking soda (1/2 tsp)
Margarine (100g)
Muscovado Sugar (50g)
Molasses (1 tbsp)
Unsweetened shredded coconut (50g)
Raisins (50g)
1) Preheat the oven to 160C.
2) In a bowl mix the flour, baking soda, coconut, oat and raisins.
3) Simmer the margarine, sugar, molasses, until it melts.
4) Mix the dry and liquid ingredients.
5) Spoon the biscuits into a baking tray and bake for 15 minutes or until golden brown.
