Date muffins

Gluten free... vegan... sugar free...

 
Makes 4:
Oat flour (gluten-free - 3/4 cup)
Rolled oats (gluten free - 1/4 cup)
Baking powder (1 tsp) 
Coconut oil (melted - 2 tbsp)  
Date syrup (2 tbsp) 
Lemon juice (2 tsp) Rice milk (1/4 cup)

1) Preheat oven to 180ºC.
2) Mix together all ingredients in a large bowl.
3) Add the mixture to muffin thins.
4) Bake for 15 to 20 minutes.
5) Enjoy them simple or with a date syrup glaze.

Dark chocolate overnight oats


Ewalie's chocolate muesli... healthy vegan, gluten free and organic ingredients come together to create a decadent tasting breakfast or snack. Who says you can't have chocolate for breakfast?!
We taste it with plain soya yogurt... it was delicious but my passion for overnight oats drove me to made them overnight and the result was delicious!

Dark chocolate overnight oats

Serves 2: 
Ewalie Chokladmüsli (100g)
Rice Milk (240 ml - or other vegetable milk)

1) Stir everything together in a bowl. Place in fridge overnight.
2) Enjoy!

Ewali brownie

Ewali gluten free brownie mix made vegan... delicious, chocolatey and fudgy!
Makes 1 (around 16 small squares):
Ewali gluten free brownie mix (1 packet)
Apple sauce (125g)
Rice milk (50 ml)

1) Preheat the oven to 180C,
2) Line a baking pan with parchment paper,
3) Empty the mix packet into a bowl,
4) Add apple sauce, rice milk and mix until well combined (if needed add extra rice milk),
5) Drop the thick batter onto the pan,
6) Press using a spatula to even it,
7) Bake for 20 to 25 minutes.
8) Serving suggestion: Red berries and vegan cream.

Sea bucktorn pop cakes

Biokia sea buckthorn powder is rich in dietary fiber, vitamins C and E as well as potassium, copper and manganese.
Makes 12 small cake pops:
All-purpose flour (1 cup)
Baking powder (1 tsp) 
Coconut oil (melted - 2 tbsp)  Agave syrup (1 tbsp)
Sea buckthorn powder (1 tbsp)
Rice milk (1/4 cup)



1) Preheat the cake pop machine.
2) Mix together all ingredients in a large bowl.
3) Add 1 tbsp of batter into each cake pops holes.
4) Close the top and bake for 3 to 5 minutes (depending on your machine)
5) Pull them out and let them cool. Enjoy them simple or with a glaze.


PS: If you don't have a cake pop machine you can do them as mini muffins and bake them in the oven.

This will be a good day!

As usual the day started with overnight oats and a cup of tea.
Early Mood is an Earl Grey tea with a fresh tingle of bergamot, angelica and subtle notes of Icelandic moss... stand tall, look at the horizon and think: This will be a good day!

Overnight oats and spelt with peach

Serves 2:
Rolled Oats (50g)
Rolled Spelt Flakes (50g)
Rice Milk (240 ml - or other vegetable milk)
Peach (2 or any other fresh fruits)

1) Stir everything together in a bowl. Place in fridge overnight.
2) In the morning top with the peaches, enjoy!
