Overnight oats are a inexpensive, delicious and full of nutrition way to start your day!
Serves 2:
Rolled oats (90g)
Water (100 ml)
Soy yogurt (3 tbsp)
Banana (1 - sliced)
Date syrup (1 tbsp)
1) Stir water and oats together in a bowl. Place in fridge overnight.
2) In the morning mix in the soy yogurt, top with sliced banana and date syrup. Delicious :)

Vegan Orange Cake
Makes 1 small cake:
Flaxseed (powder - 2 tsp + 2 tsp water)
the Vegg (1 tbsp+1tbsp rice milk)
Dark Muscovado Sugar (4 tbsp)
Yofu (125g - natural, sugar free)
Olive Oil (2 tbsp)
All purpose flour (150g)
Baking powder (2 tsp)
Cinnamon (1tsp)
Orange juice (100 ml + 100ml)
1) Preheat the oven to 180° C (350° F)
2) Line a small cake tin.
3) Mix together all ingredients, use only half of the orange juice and reserve the rest.
4) Pour the batter into the prepared cake tin. Bake for 40 minutes or until a toothpick inserted into the middle of the cake comes out clean. Remove from oven.
5) Pour over the orange juice (while the cake is still in the tin) and leave until cold.
6) Ease the cake from the sides of the tin before trying to remove it from the tin.

Yofu Cake
Yofu (2 cups; 250g - natural, sugar free)
Muscovado Sugar (3 cups)
Flour (4 cups)
Olive Oil (1 cup)
Eggs (2)
Baking powder (2 tsp)
1) Preheat the oven to 180° C (350° F)
2) Line a cake pan.
3) Mix together all ingredients in a large bowl.
4) Pour the batter into the prepared cake pan, and bake for 30 to 35 minutes, until the top is golden brown and a cake tester comes out clean.

Fast Yofu Cake
Serves 4:
Egg (1)
Muscovado Sugar (100g)
Soy Yofu (200 ml)
Non-hydrogenated soy margarine (60g + 1 tsp)
All purpose flour (150g)
Baking powder (1 tsp)
1) In a bowl, mix all ingredients until well combined.
2) Melt one nut butter in a woven proof skillet, add the dough , smoothing with a spatula. Cook over low heat for 10 minutes.
3) Put in the oven, under the grill and cook for another 5 minutes.

Summer Trifle
Serves 2:
Oat Cookie (1 - big)
Natural Soy Yofu (125g)
Red fruits jam (1 tbsp)
Strawberries (6)
Maple Syrup
1) Crush the cookie and place in the bottom of the serving bowl.
2) Slice the strawberries and mix with the maple syrup.
3) Add in each bowl 2 spoons of yofu, strawberries, more yofu and a spoon of red fruits jam.

Mango Popsicles
Serves 6:
Mangoes (1 - peeled, stone removed, chopped)
Soya Yofu (125g - natural)
Honey (1 tbs)
1) Place all the ingredients in a blender, blend until smooth.
2) Pour into popsicle molds and freeze for, at least, 2 hours.
