Overnight banana and date oats

Overnight oats are a inexpensive, delicious and full of nutrition way to start your day!
 
Serves 2:
Rolled oats (90g)
Water (100 ml)
Soy yogurt (3 tbsp)
Banana (1 - sliced)
Date syrup (1 tbsp)

1) Stir water and oats together in a bowl. Place in fridge overnight.
2) In the morning mix in the soy yogurt, top with sliced banana and date syrup. Delicious :)

Banana & Strawberry soft serve

Raw, delicious, creamy and soft...
Serves 2:
Bananas (2 - ripe, peeled, sliced, frozen)
Strawberries (6 - frozen)

1) Place frozen bananas and strawberries in the bowl of a food processor. Pulse several times to break into smaller pieces, then turn on and run for about five minutes, stopping occasionally to scrape down the sides of the bowl. 

2) The mixture will start to resemble soft serve in a few minutes. Transfer to a bowl and place in freezer for about 15 minutes or serve immediately. (In the picture served with strawberry sauce)

Raw Cashew, Banana and Blueberry Mousse

Made from whole dried wild berries, Biokia’s berry powders contain no added ingredients. One hundred grams of berry powder equals approximately one kilogram of berries, offering the health effects of berries in a highly condensed form.


Serves 2:
Cashews (50g - soaked, at least, 2 hours)
Banana (1 - frozen, organic)
Blueberry powder (1 tbsp)
Coconut oil (1 tbsp - melted)

1) In a blender, blend cashews with banana until it forms a very smooth paste.
2) Add the blueberry powder, coconut oil and mix  until combined.
3) Spoon into two small serving dish, if you wish a thicker consistency you can let mousse set up in the fridge for 30 minutes.

Banana and Persimmon Vegan Cake

Moist, sweet, flavourful and easy to bake :)
Serves 6 to 8:
Banana (2 - ripe)
Persimmons (1 - ripe, pulp)
Muscovado Sugar (1 cup)
Wheat flour (3 cups)
Baking powder (2 tsp)
Water (1 cup)
Olive oil (1/2 cup)
Lemon (juice of half)

1) Preheat the oven to 170 º.

2) Mix banana, sugar, persimmon pulp.
3) Gradually add the flour, baking powder, water, olive oil.
4) Add the lemon juice and mix well.
5) Pour the batter into the prepared cake pan, bake for 35 to 40 minutes, until the top is golden brown.

Açai and Strawberry Oat Smoothie

A blend of goodness from Oatly and High Tech Scandinavia. Refreshing after a great run in the Swedish Autumn sun.
 
Serves 2:
Strawberries (100g - frozen)
Banana (1)
Açaí (powder - 1 tsp)
Oatly oat drink (400 ml)

1) Blend everything until smooth. Enjoy!

Raw Strawberry Mousse

On a cold and rainy day, after a wet race, a raw dessert delicious and very easy to make...

Serves 2:
Cashews (50g - soaked, at least, 2 hours)
Chia seeds (2 tsp mixed with 1 tbsp water)
Strawberries (100g - frozen, organic)
Banana (50g - frozen, organic)
Agave nectar (2 tbsp)
Coconut oil (1 tbsp - melted)

1) In a blender, blend cashews and chia.
2) Add the fruits until it forms a very smooth paste.
3) Mix agave nectar and coconut oil until combined.
4) Spoon into two small serving dish and let mousse set up for at least 30 minutes.

Strawbanana Chia Smoothie


2 servings:
Strawberries (10 - organic)
Banana (1- ripe)
Rice Milk (500 ml - fresh)
Chia Seeds (1 tbsp - soaked overnight)

1) Peel a ripe banana and break it into small chunks.
2) Pour the rice milk into a blender add the chia, banana and strawberries. Blend it up until there are no chunks left.

Oat&Banana Skillet Cookies


Makes 10-12 cookies:
Rolled oats (60g)
Quinoa flour (20g)
Maple syrup (2 tbsp)
Banana (1, mashed)
Nuts (2 tbsp, chopped)
Vanilla extract (1/2 tsp)
Cinnamon (1 tsp)
Baking soda (1/2 tsp)
Baking powder (1/2 tsp)
Unrefined coconut oil (3 tsp, for cooking)

1) In a bowl, mix together all of the dry ingredients.
2) In another bowl, mash the banana, add the maple and the vanilla.
3) Stir the wet into the dry until just combined. The batter should be thick.
4) Heat a skillet over med-low heat and add 2 tsp of coconut oil.
5) Spoon the batter into the pan and press down lightly.
6) Cook until the bottoms are golden brown and then flip.
7) Repeat the process with the rest of the dough.
8) Place on a cooling rack, and they will firm up a bit more once cooled.

Simple Overnight Oats


Serves 2:
Rolled oats (90g)
Rice drink (240 ml)

1) Stir everything together in a bowl. Place in fridge overnight.
2) In the morning top with one sliced banana or some cinnamon.

Vegan Banana Pancake


Makes 4:
All-purpose flour (60g)
Whole wheat flour (60g)
Muscovado Sugar (1 tbsp)
Baking powder (2 tsp)
Cinnamon (1 tsp)
Bananas (2 large ripe)
Soy drink (200 ml)
Non-hydrogenated margarine.

1) Mash the banana with a fork and set aside.
2) In a large bowl combine all the dry ingredients and thoroughly stir with a spatula.
3) Combine the soya milk and banana. Add to dry ingredients and whisk. If it is too dry add a little more drink.
4) On a medium heat melt the margarine in a frying pan and then carefully pour into the pan - the size depends on you, my preference is small to medium.
3) When bubbles appear on top it is ready to flip over. Cook for a minute or two on the other side and keep warm in a very low oven. Repeat.
4) Serve simple or with maple syrup.

2 servings:
Melon (125g - peeled and chopped)
Peach (1 - chopped)
Banana (1)
Water (500 ml)

1) Peel a ripe banana and break it into small chunks. Freeze the banana for one hour or more.
2) Pour the water into a blender add the frozen banana, the peach and the melon. Blend it up until there are no chunks left.

2) Pour the water into a blender add the frozen banana and the peach. Blend it up until there are no chunks left.

2 servings:
Raspberry (100g)
Banana (2)
Rice Drink (600 ml)

1) Peel a ripe banana and break it into small chunks. Freeze the banana for one hour or more.
2) Pour the rice drink into a blender add the frozen banana and the raspberry. Blend it up until there are no chunks left.
3) Enjoy.
