Chia Balance Smoothie

Superb flavor, delicious and energizing!
Mix 1 balance smoothie sachet with 200 ml of water, add 2 tbsp of chia seeds and leave in the fridge for a couple of hours. Serve with a tbsp of vegan yogurt and a splash of agave nectar.... Yummy!

Blueberry cashewcake

Another delicacy made special with Roberts Berries :) Yummy!
Serves 4:
Almonds (75g)
Dried Figs (pitted - 75g)

For filling :
Cashews (raw - 100g)
Lemon juice (fresh - 2 tbsp)
Agave (2 tbsp)
Coconut oil (1 tbsp - melted)

Topping:
Chia seeds (2 tbsp)
Berrie wild blueberry (200g)

1) Soak the cashews in a bowl of water for a couple of hours or overnight.
2) Add almonds and figs to a food processor and blend until sticky.
3) Press the mixture into a lightly oiled pie plate, or some small cooking rings for individual portions.

4) Place in the freezer while you make the cashew cream.
5) Rinse and drain the cashews, add them to a blender with the lemon juice and agave. Blend until super smooth and creamy with no texture at all. Once you have achieved that you can add the coconut oil and give it another quick blend.
6) Spoon into the pie shell and freeze until firm.
7) Mix berry wild blueberry and chia seeds together. Let it sit in the fridge for a couple of hours and top the cashew cakes before serving.

Strawberry Cashew Cake

Vegan summer pleasures :)


Serves 4:
Pecan nuts (75g)
Dates (pitted - 75g)
Rolled Oats (raw & gluten free - 25g)

For filling :
Cashews (raw - 100g)
Strawberries (6 - frozen)
Lemon juice (fresh - 2 tbsp)
Agave (2 tbsp)
Coconut oil (1 tbsp - melted)

1) Soak the cashews in a bowl of water for a couple of hours or overnight.
2) Add nuts,dates and oats to a food processor and blend until sticky.

Macadamia and blueberry mousse

Raw, rich and delicious!
Serves 2:
Macadamia (50g - soaked, at least, 2 hours)
Blueberries (150g - frozen, organic)
Agave nectar (2 tbsp)
Coconut oil (1 tbsp - melted)

1) In a blender, blend macadamia with fruits until it forms a very smooth paste.
2) Add agave nectar and coconut oil. Mix again until combined.
3) Spoon into two small serving dish and let mousse set up for at least 30 minutes.

Sea bucktorn pop cakes

Biokia sea buckthorn powder is rich in dietary fiber, vitamins C and E as well as potassium, copper and manganese.
Makes 12 small cake pops:
All-purpose flour (1 cup)
Baking powder (1 tsp) 
Coconut oil (melted - 2 tbsp)  Agave syrup (1 tbsp)
Sea buckthorn powder (1 tbsp)
Rice milk (1/4 cup)



1) Preheat the cake pop machine.
2) Mix together all ingredients in a large bowl.
3) Add 1 tbsp of batter into each cake pops holes.
4) Close the top and bake for 3 to 5 minutes (depending on your machine)
5) Pull them out and let them cool. Enjoy them simple or with a glaze.


PS: If you don't have a cake pop machine you can do them as mini muffins and bake them in the oven.

Grötmix

Vegan coconut and chocolate balls

Refined sugar free, gluten free and vegan.

Makes 4 
For the filling:
Shredded coconut (50g) 
Organic coconut oil (25g - room temperature)
Agave nectar (20g)

For the coating: 

Raw cocoa powder (10g)
Agave nectar (1 tsp)
Organic coconut oil (1 tsp)
 

1) Place coconut, coconut oil and agave in a bowl and mix through until well combined.
2) Roll mixture into balls, place onto a baking tray and pop into the freezer to chill.
3) Melt the coconut oil and combine with cacao and agave.
4) Take the balls out of the freezer, dip into the chocolate mixture and place back into freezer.
5) Enjoy and if there's some left keep them chilled, in the freezer.

Wheat and Rye Protein Bread

Adding protein to baked goods can prevent them to rise and make them too dense. Although, with this Organic Rice Protein Powder the bread was soft, smooth, rich and very tasty.
Makes 2 loaves:
Strong wheat flour (350g)
Rye flour (300g)
Rice Protein (50g)
Salt (1 tsp)
Olive oil (1 tbsp)
Agave nectar (1 tsp)
Fast-action Dried Yeast (4g)
Extra flour for dusting
Water (300 ml - tepid)

1) Stir the flours, rice protein and salt together in a large bowl, then make a well in the centre and add the water, olive oil, salt, agave, yeast and stir.
2) Mix until the mixture comes together and forms a slightly lumpy and sticky dough.
3) Transfer the dough to a work surface and knead until it’s smooth and elastic.
4) Shape it in two loaves and leave it in a warm place for at least two hours until it has doubled in size.
5) Preheat the oven to 180C.
6) Bake the loaf for 20 minutes or until golden brown and crusty. The base should sound hollow when tapped. Cool on a wire rack.

Rustic Apple Galette

You can have it for breakfast, as a dessert or simply enjoy it as with a cup of tea!
For the crust: 
Flour (200 g)
Vegan butter (100g)
Water (40ml)
For the filling: Apples (5 - peeled, cored, and sliced thin)
Agave nectar (1 tbsp)
Cinnamon (2 tsp)

1) Combine flour, butter and water in a bowl. Mix by hand until you reach a bread like dough consistency.

2) Preheat oven to 180C.
3) Place the apples, agave and cinnamon in a bowl and toss well until combined.
4) Roll out the dough and fill in with the apples.
5) Bake for 35 minutes or until crust is golden brown.

Energy tropical vegan cake

Delicious...
Makes 1 cake:
All-purpose flour (1 1/2 cup)
Baking powder (2 tsp)
Extra virgin olive oil (1/4 cup) 

Agave syrup (1 tbsp)
Energy smoothie (prepared with 250 ml water)

1) Preheat the oven to 180° C (350° F).
2) Line a small cake pan.
3) Mix together all ingredients in a large bowl.
4) Pour the batter into the prepared cake pan, bake for 30 to 35 minutes, until the top is golden brown.

Vegan pineapple cake with cream fraiche

Oatly IMat fraiche... it's really fresh and delicious!


Makes 1 cake:
All-purpose flour (1 1/2 cup)
Baking powder (2 tsp)
Extra virgin olive oil (1/2 cup) 

Agave syrup (1/2 cup)
Pineapple juice (1 cup) 

Topping:
IMat fraiche (200 ml)
Agave syrup (1tbsp)
Pineapple (200g)

1) Preheat the oven to 180° C (350° F).
2) Line a small cake pan.
3) Mix together all ingredients in a large bowl.
4) Pour the batter into the prepared cake pan, bake for 30 to 35 minutes, until the top is golden brown. Cool completely. 

5) Whip the Imat fraiche with the agave, spread evenly over the cake and sprinkle with pineapple.

Hazelnut Hot Cocoa

It’s such a simple recipe it’s almost a non-recipe. The hazelnut taste combines with the cocoa in a rich fulfilling way!

Serves 2:
Rice Drink with Hazelnuts (500 ml)
Cocoa (4 tbsp - powder, organic)
Agave syrup (1/2 tbsp)

1) Pour the rice milk into a large pan, and bring almost to the boil over a medium heat.
2) Spoon the cocoa and agave into the hot rice milk, give it a good whisk and serve with some little rice cookies. These cookies are made with rice, spelt flour, rice syrup and rice drink with calcium from vegetable source... and they are yummy!

No-Bake Oat and Rice Bars

Simple and amazingly delicious. Gluten free and vegan to go treat!
Makes 8 small bars:
Oat (Provena Gluten-Free Jumbo Oats - 50g)
Puffed Rice (20g)
Vegan Butter (25g)
Agave Syrup (25g)
Brown sugar (25g)


1) In a large bowl, stir oats and rice cereal together. Set aside.
2) In a small pot, melt butter, agave and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes.
3) Pour over dry ingredients and mix well to moisten all ingredients.
4) Firmly press into pan.
5) Cool on room temperature for two hours before cutting into bars. Wrap in parchment or plastic wrap and store at room temperature.

Skillet Cake with Açaí Frosting

This week has kept me very busy, the days seemed to have 48 hours ...
the dinners had to be simple, quick and nutritious. And so açai powder and coconut oil played a main role at dessert time.

High Tech Scandinavia products are tastefull and you can order them online.


Serves 4:
Muscovado Sugar (50g)
Vegetable milk (200 ml)
Coconut oil (1 tbsp + 1 tsp)
All purpose flour (150g)
Baking powder (1 tsp)

For the frosting:
Cashews (raw - 50g - soaked for 2 hours) 
Lemon juice (fresh - 1 tbsp) 
Agave (1 tbsp) 
Açaí Powder (1 tbsp)

1) In a bowl, mix all ingredients until well combined.
2) Melt one teaspoon of coconut oil in a woven proof skillet, add the dough, smoothing with a spatula. Cook over low heat for 10 minutes.
3) Put in the oven, under the grill and cook for another 5 minutes, until golden brown.
4) Rinse and drain the cashews. Add them to a blender with the lemon juice and agave. Blend until super smooth and creamy with no texture at all. Once you have achieved that you can add the açaí powder and give it another quick blend.
5) Spoon into the cake and enjoy.

Serves 4:
Walnuts (75g)
Dates (pitted - 75g)
Oat flakes (25g)

For filling :
Cashews (raw - 100g)
Lime juice (fresh - 2 tbsp)
Agave (2 tbsp)
Coconut oil (1 tbsp)

1) Soak the cashews in a bowl of water for a couple of hours or overnight.
2) Add walnuts,dates and oats to a food processor and blend until sticky. 
3) Press the mixture into a lightly oiled pie plate.
4) Place in the freezer while you make the cashew cream.
5) Rinse and drain the cashews then add them to a blender with the lime juice and agave. Blend until super smooth and creamy with no texture at all. Once you have achieved that you can add the coconut oil and give it another quick blend.
6) Spoon into the pie shell and freeze until firm.

Raw Strawberry Mousse

On a cold and rainy day, after a wet race, a raw dessert delicious and very easy to make...

Serves 2:
Cashews (50g - soaked, at least, 2 hours)
Chia seeds (2 tsp mixed with 1 tbsp water)
Strawberries (100g - frozen, organic)
Banana (50g - frozen, organic)
Agave nectar (2 tbsp)
Coconut oil (1 tbsp - melted)

1) In a blender, blend cashews and chia.
2) Add the fruits until it forms a very smooth paste.
3) Mix agave nectar and coconut oil until combined.
4) Spoon into two small serving dish and let mousse set up for at least 30 minutes.

No-bake Granola


Serves 4:
Rolled oats (100g)
Agave nectar (50g)
Dark Muscovado Sugar (50g)

1) Place agave and the sugar in a small saucepan.
2) Bring to a boil over medium heat; let boil until large bubbles begin to form.
3) Remove from heat and mix the oats stirring to evenly combine.
4) Spread evenly onto a sheet of parchment paper. Allow to cool completely before storing in an airtight container.
5) Enjoy with plain yofu!

Serves 2:
Cashews (50g - soaked, at least, 2 hours)
Strawberries (100g - frozen, organic)
Blueberries (50g - frozen, organic)
Agave nectar (2 tbsp)
Coconut oil (1 tbsp - melted)

1) In a blender, blend cashews with fruits until it forms a very smooth paste.

Autumn Crumble


Serves 6:
For the topping:
Rolled oats (200g)
All purpose flour (50g)
Non-hidrogenated margarine (100g)
Dark muscovado sugar (2 tbsp)
Cinnamon (½ tsp, ground)

For the filling:
Apples (2 - peeled, cored and cut into small pieces)
Pears (2 - peeled, cored and cut into small pieces)
Quinces (2 - peeled, cored and cut into small pieces)
Agave nectar (1 tbsp)
Corn Starch (1 tbsp)
Water (3 tbsp)
Star anise (1)
Cinnamon (1 stick)

1) Preheat the oven to 200C/400F/Gas 6.
2) Combine the filling ingredients in a large casserole. Cook over reduce heat for about 10 minutes, or until the fruits are softened but still retain their shape. Remove the star anise, cinnamon stick and discard.
3) Place the oats, flour, cinnamon and sugar in a large bowl and mix well. Taking a few cubes of margarine at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.
4) Spoon the fruit mixture into the bottom of a ovenproof dish, then sprinkle the crumble mixture on top.
5) Bake in the oven for 15-20 minutes until the crumble is browned and the fruit mixture bubbling.
