Pasta with kantareller

I love their flavour since the first time I tasted them... they are wild, golden and earthy... delicious!

Serves 2:
Fusilli (gluten free - 200g)
Kantareller (Chanterelle - 200g)
Soy cream (200ml)
Olive oil
Pepper
Salt

1) Cook the fusilli "al dente", drain and reserve.
2) In a saucepan cook the mushrooms with a drizzle of olive oil until soft.
3) Add the soy cream cream and simmer for 2 minutes. Season to taste.
4) Pour the sauce over the pasta and toss to coat.

"The Pasta" - Fusilli with Creamy Mushroom Sauce

I think I can call this a family recipe... "the pasta"... that as always been the first answer from my little (higher than me) sisters for the question: what do you want for dinner?

I've already published a similar recipe but this one has a very special ingredient: oat imat creamy, full of flavour, light and delicious... another great product from Oatly.
Serves 2:
Fusilli (200g)
Mushrooms (200g)

Oatly imat (200ml)
Garlic (1tsp - powder)
Tomato Pulp (1 tbsp)
Soy Sauce (1 tbsp)
Olive oil
Pepper

1) Cook the fusilli "al dente", drain and reserve.
2) In a saucepan cook the mushrooms with a drizzle of olive oil until soft. Add the garlic, soy sauce and tomato pulp and mix until combined.
3) Add the oatly imat cream and simmer for 2 minutes.
4) Pour the sauce over the pasta and toss to coat. Season to taste with pepper.

Mushrooms Fusilli


Serves 2 to 3:
Fusilli (200g - cooked and drained)
Mushrooms (200g - sliced)
Pineapple (100g - cubed) 
Red Pepper (50g - cubed)
Green Pepper (50g - cubed)
Soy Cream (200 ml)
Olive Oil
Soy Sauce (1 tbsp - reduced salt)

1) Heat the olive oil in a pan and sauté the mushrooms for a few minutes, until soft.
2) Add the peppers and the pineapple and cook for 5 minutes.
3) Sprinkle with soy sauce.
4) Add the soy cream, the cooked fusilli and simmer for 2 minutes.

Pasta and Seitan in Biryani Sauce



Serves 2:
Fusilli (200g - cooked and drained)
Seitan (100g - cubed)
Shallot (2 -finely diced)
Biryani Paste (2 tsp)
Soy Cream (200 ml)
Olive Oil
Salt

1) Heat the olive oil in a pan and sauté the shallots for a few minutes to soften.
2) Add the seitan and cook for 5 minutes.
3) Mixture the biryani paste until well combined.
4) Add the soy cream, the cooked fusilli and simmer for 2 minutes.
5) Season to taste.

Fusilli with pumpkin & zucchini


Serves 2:
Fusilli (175g)
Pumpkin (100g - peeled, cubed)
Zucchini (100g - cubed)
Tomato Passata (200 ml)
Onion (1 - sliced)
Soy drink (2 tbsp)
Salt
Olive oil

1) Bring a large pot of water to the boil. Add the pasta and cook "al dente".
2) In a large frying pan, heat olive oil and add the pumpkin, zucchini and onion. Fry for about 5 minutes, stirring continuously until the pumpkin start to soften
3) Add the tomato and the soy drink.
4) Season to taste.
5) When the fusilli is cooked (it should take 10 minutes), drain well and add to the pumpkin mixture. Toss the fusilli through the sauce and spoon onto plates.

Biergarten Fusilli



Serves 2:
Fusili (200g - cooked and drained according to packet instructions)
Onions (2 - finely chopped)
Eggs (2)
Olive oil (1/2 tbsp)
Chives (2 tbsp - chopped)
Salt

1) Heat the oil in a frying pan over a medium heat. Add the onion and cook for two minutes.
2) Lightly beat the eggs with the chives and salt to taste.
3) Add the cooked pasta in the frying pan and pour over the eggs. Fry until the eggs are cooked.
